Welan gum manufacturer is the metabolism polysaccharide of alcaligenessp. The structure of welan gum is similar to gellan gum, However, C3 position of glucose residues connected with glucuronic acid and rhamnose links α-L-rhamnose or α-L-branched-chain mannose, and the chance of connecting rhamnose is 2 / 3; In addition, about half of the four-sugar fragment with acetyl and glyceryl groups [2]. Welland gum contains 2.8 to 7.5 acetyl, 11.6 ~ 14.9 glucuronide acid.
 
Characteristics of Welan Gum
 
1. can be dissolved in cold water, it presents regular and stable structure in aqueous solution,and forms the high viscosity solution.
 
2. has the characteristics of pseudoplastic flow (shear thinning effect),and a good ability of suspension in the stationary state.
 
3. It is relatively stable in the range of PH2-12 and has good salt tolerance.
 
4. welan gum can form a gel under the conditions of NaOH existence and heating, but the gel strength is very weak.
 
5. It has the thermal reversibility for the stability of temperature, the influence of temperature on the Welan gum is relatively small. Under the condition of 121 ℃ terilization for 15 minutes, its viscosity will not decrease. The viscosity of 0.4 xanthan gum solution has been zero when the temperature is 135℃ , but the vidcosity of welan gum solution was just close to zero under the same conditions when the temperature is up to 163℃. Under the normal conditions, the viscosity of welan gum solution will decrease with the the temperature increasing and with the temperature lowering, it can completely restore.
